Sometimes it is hard to emanate comfort for some people let alone myself when in dire stress levels and turn ourselves into cracked-up state that would perhaps lead us to a nervous breakdown. Perhaps what I learned from my Mom is that the comfort of food doesn't mean you have to slave all day in the kitchen for a quick fix. All it takes is a quick and steady mind and a handful of standby ingredients and just throw all together and voila! Instant calmer.
I always believed ice cream is the universal instant calmer for the senses. I particularly hummed to ice cream providing its sub-zero calmness and the addition of the smooth concoction of peanut butter and chocolate is partnership made in heaven. Simple to make, mix and enjoy. Now that's instant confort, because when you want comfort is has to be fast.
Having chocolate peanut butter fudge sundae is the stuff of dreams, and when you serve this to your friends they will kneelingly weep with gratitude.
What you'll need:
175ml double cream or multipurpose cream
100g milk chocolate, chopped
100g smooth peanut butter (Skippy for preference)
3 x 15ml tablespoons golden syrup
ice cream for your choice; chocolate vanilla and toffee works best. Häagen-Dazs anyone?

4 x 15ml tablespoons salted peanuts, roughly chopped or left whole to taste

Mix the milk chocolate, cream, golden syrup and peanut butter altogether in a saucepan on medium heat until melted. Scoop out your ice cream of your choice into a bowl or some old school sundae glasses (which I still have) and simlply decant the fudgey sauce and top in some salted peanuts if you like. Totally orgasmic and serves 4 lucky people.
